The
stunning, lush, green Umbrian countryside captivated William Turner
en route to Rome and inspired him to paint several imaginary landscapes.
The area is famous for its perfumed truffles and flavoursome porcini
mushrooms. The region produces fine olive oil and wines.
Our location
is a small Medieval village, or 'Borgo', of Titignano is set in 4,500
acres of Umbrian countryside with breathtaking views over Lake Corbara
and the Umbrian Hills. For the duration of the courses here we have
taken over the whole borgo and working closely with the owners, the
Corsini family, who have built a kitchen specifically designed for
our classes.
The village
has its own wood fired oven where we continue our much loved pizza
making sessions. The estate will also supply us with wines produced
from the grapes of the Corsini's surrounding vineyards, and olive
oil from their groves. The region is renowned for the quality of its
porcini
mushrooms, black summer truffles, and Perugian chocolate - these ingredients
and flavours enhance many of the dishes you will be making during
the week.
All the bedrooms
are en suite, have views over either the main piazza or the hills,
and are comfortably and stylishly furnished. Views of the hilltop
towns of Todi and Orvieto can also be enjoyed while taking a swim
in the magnificent swimming pool.

Titignano is well
off the beaten track, about half an hour from the beautiful town of
Orvieto with its 13th century Duomo and bustling open market, which
we visit to load up on local delicacies. We also visit Perugia, the
historic hill top regional capital, and Bar Sandrini, where we sit and
sip the most delicious coffee and sample the famous local speciality,
rich yellow pane di formaggio.
