with David Thompson


A unique opportunity to tour and taste the best of Thailand.

David’s love of Thailand began some twenty years ago with an accidental visit to this remarkable country. He began to document the traditional recipes and culinary techniques handed down through the generations. During the tour we will use these recipes cooking them in beguiling locations. David arrived in London two years ago from the renowned Darley Street Thai restaurant in Sydney and is now based at his Michelin starred restaurant Nahm at the Halkin Hotel.

Being primarily based in the central plains enables us to visit rice paddies, see the locals harvesting their rice, visit markets teeming with exotic ingredients and cook dishes such as fish braised with sugar cane, a spicy tamarind relish with white turmeric and red curry of minced chicken with ginger. But not only for ourselves, we will also prepare a meal for monks acknowledging Buddhism’s special place in Thai culture. We will then fly north to go rafting down one of the mighty northern rivers, ride elephants and sample the rugged jungle food of this mountainous region – venison stir fried with basil, catfish deep fried with garlic and peppercorns and spicy curries with aubergines and wild ginger. Moving south we will visit one of the many fishing villages that ring the Gulf of Thailand. We’ll fish from a boat for tropical fish and squid, crab and lobster, grilling the catch and eating it with chilli and lime sauce on one of the sparkling beaches.
