35, Angela Hartnett has become one of the most high profile women in
the culinary industry. In October 2002 she launched ‘M E N U’
and ‘The Grill Room’ at The Connaught, interrupting a century
of male lineage in one of the institutions of the London restaurant
scene. Angela's position at The Connaught earned her a Michelin Star
in January 2004.

Blue Print Café is one of Sir Terence Conran's most successful
restaurants overlooking the River. Jeremy worked with Simon Hopkinson
at Bibendum before becoming head chef at Alastair Little in Soho. He
is a columnist for The Guardian, The Independent and Food Illustrated.
Jeremy will conduct a mostly
demonstration class of some of The Blue Print Café's classic
dishes and some of Jeremy's favourites. This proves to be a fantastically
entertaining and informative morning and last year’s group have
already had a re-union. There will be a coffee break and the class will
be followed by lunch in the restaurant.

Partie when the restaurant opened in 1987 and took over the kitchen
reins as Head Chef from Simon Hopkinson in 1995. He not only maintains

of each dish. In 2002 the restaurant undertook a £1m makeover,

Nahm has been awarded one Michelin star – the first Thai restaurant
in Europe to achieve such an accolade.
As Thai cuisine covers a huge variety of techniques and skills, Head
chef Matthew Albert and David Thompson have devised a series of Masterclasses
covering different aspects of Thai food, designed to be taken individually
or as a complete course of 7 classes. Some will include a wine tasting
and matching wines to Thai cuisine. Morning hands on classes will take
place in the kitchen at Nahm with fantastic ingredients flown over from
Bangkok exclusively for the restaurant. Lunch will be served in the
chic hotel dining room.
A Thai meal is an exercise in balance. Several dishes arrive together
and eaten with rice. Rarely does a meal have a repetition of dishes
or tastes, so a curry, a salad, some soup and a stir fry all combine
to make the meal varied and satisfying. Each of the following classes
is designed to demonstrate the various techniques and dishes employed
to create a balanced, complete Thai meal and each class will highlight
a particular style of dish or technique within the context of a meal.
Over a coffee the class will start with a relaxed introduction to the
recipes and ingredients to be used during the class. Afterwards, downstairs
in the kitchen, Matthew will work through the recipes, discussing particular
techniques and possible alternative recipes and ingredients.
Each hands on class will have no more than 8 guests to ensure that everyone
will be able to fully participate in the lesson. The class will then
be followed by lunch in the Restaurant.
Curries & Pastes

The first class will focus on curries. Matthew will be discussing the
various ingredients which make up a curry paste as well as the traditional
method of making them and include preparing coconut cream. He will then
move onto different types of curry styles, such as a red curry to make
fish cakes, a green curry of chicken.
Summer time on the Grill

Grilling is one of the most common of Thai cooking techniques. In market
places and street stalls catfish and prawns are grilled slowly over
smoky embers. While the technique is simple, the many ways of dressing
the grilled dish are not always so. Matthew will start with a simple
grilled prawns served with a nahm jim, a hot and sour sauce. then he
will prepare a more complex, robust grilled fish curry.

Salads are the sprightly dishes of the Thai repertoire. Pungent dressings
are made with fresh chillies, lime juice and fish sauce which season
a staggering variety of ingredients, such as a tart and juicy pomelo
salad with shredded chicken. More interesting, perhaps is the lobster
salad dressed with rich chilli jam and fresh coconut cream. Also preparing
traditional dishes that are commonly eaten in the streets and markets
of Thailand.

quite easy to prepare will impress your guests. On the menu will be
a steamed curry of scallops and a gentle relish of crabmeat served with
white turmeric. In these classes, Troy Sutton, Nahm's sommelier, will
during the subsequent lunch, discuss the paring of wines with this meal
and how to choose some elegant wines that work with this challenging
cuisine.
